Mulled Wine


  • 2 oranges

  • 1 lemon

  • 60g light brown soft sugar

  • 2 cinnamon stick

  • 8 cloves

  • 1 star anise

  • 60ml ruby port

  • 75cl bottle of wine


  • Zest the lemon and one of the oranges
  • Add the zest, sliced lemon and juice of the zested oranges to a large saucepan
  • Push the cloves into the other orange and add that too
  • Add sugar, cinnamon sticks and port and start the heat
  • Simmer until it turns into a light syrup
  • Add the wine and simmer for 20mins
